The successful candidate must be able to:
Receive, inspect and store meat and related products upon delivery to ensure high
quality.
Conduct yield testing on brined meat deliveries to ensure that only the section’s
prescribed levels are adhered to.
Ensure that the meat to be issued to kitchens has been sliced/ cut according to
standing procedures and then weighed before being issued.
Issue out approved requested orders to kitchens/outlets.
Secure all stocks to deter pilferages, thefts, damage or deterioration in quality.
Keep updated records of all items in the butchery by recording stocks issued out to
cooks and that remaining in stock.
Accountable for all stocks in the butchery by updating meat bin card.
Ensure that there are sufficient stocks in the butchery by conducting daily butchery
stock checks.
Carry out periodic stock takes to account for all deliveries and issued out products. All
butchery items received and those issued out should be clearly accounted for.
Report all malfunctioning equipment to superiors immediately.
Ensure all health and safety regulations and procedures within the butchery and the
stores in general are always maintained.
Certificate in professional cookery/ animal husbandry or studies of related field.
A Degree or Diploma in the related field will be an added advantage.
A minimum of five (5) Ordinary Level Passes including English Language and
Mathematics.
At least 3 years working experience in a butchery, abattoir or related food industry.
